Oreo Stuffed Cookies

Baking is one of my favourite things to do and because of this I FINALLY decided to experiment and make the Oreo Stuffed Cookies, which in my opinion were amazing. I had been wanting to make these cookies for a while now, but never got round to it. But let me just say they are one of the most delicious things I've ever tasted. What a great combination an Oreo in a Cookie! 



To make 12 Oreo Stuffed Cookies 

  • 12 Oreo Cookies
  • 150g Soft Brown Sugar 
  • 150g Salted Butter (Softened)
  • A couple of drops of Vanilla Essence 
  • 1 Large Egg
  • 225g Plain Flour
  • 1/2 Teaspoon Bicarbonate of Soda 
I added 150g of milk chocolate chips to mine (I love chocolate!) this is optional.


 Method 

  • Pre Heat oven to 190 degrees and line two baking trays with tin foil
  • Cream the Butter and Sugar together (by hand or whisk) 
  • Beat the Egg and add a little at a time to the mixture
  • Sieve in the Flour and Bicarbonate of Soda, mix with a wooden spoon 
  • Using an Ice-Cream scoop, scoop dough to both the top and bottom of the Oreo and gently seal until Oreo is covered
  • Place in fridge for 15 minutes so the dough hardens, which prevents the dough from spreading when baked
  • Bake in the Oven for 12-15 minutes until Golden Brown
  • Enjoy! 





















Scoop Cookie dough onto both the top and bottom of the Cookie to sandwich the Oreo. Seal the dough to cover the Cookie before baking. 

Tip: Before baking place the dough in the fridge for about 15 minutes to harden as otherwise the dough may spread to much during baking.
